Cellar
Our grapes picked up by hand in small boxes, after some days of cold pre-fermentation it vinificates both in the steel tubs inox termoregolate and concrete vats; where the long macerations , the frequent fulling and delestage optimize the extraction from the peels. Once alcoholic and malolactic fermentation made in tubs of cement are completed, the wine is transferred into the aging cellar, where it evolves and matures, it rests both in oak cask of 25 hl and in French oak barriques of 225 l.
The selection of barrels is made every year with the highest accuracy, trying to create the best mix of woods to exalt the terroir of Fossacolle.
